Spring Like Weather

Only three days until Christmas, did you get all your holiday shopping done for your loved ones? Well, I have not done Christmas shopping because my husband did it yesterday at Toys R US. My husband bought him Lego City, a Pokemon set and Ford Mustang, then I think he is also getting a pug. Charles has been wanting a pug since he saw a video blogger on YouTube about his pug so he also wants one. Getting a pug comes with a responsibility which I don’t think Charles could do though it would be a great buddy for him to have around. Or maybe, the two of them could sleep in his room which I doubt happening anytime soon. Well, it has been a Spring like weather here in Northwest Arkansas, though it is kind of sad we don’t have snow on Christmas day. As long as I recall since I came here to the United States of America, we always have snow on Christmas day. My son, Charles is looking forward to making a snowman and snow angel hopefully January, we can get some snow.

Anyway, I just wanted to share some of the foods that I took when we ate at Copelands of New Orleans and Hunan Manor. We ate quite a few times  at the restaurants over the past couple of weeks but sometimes I don’t feel like taking pictures specially when I saw people around me not taking snapshot on their foods. One time we were having lunch at Copelands and I was taking pictures but I was really starving then I asked myself why I am taking these photos instead of eating the food?

Merry Christmas

I was so ecstatic to get the Christmas cards out from the box when I noticed the word Christmas is missing with letter “h”. Hmmm it still sound Cristmas without h though I would prefer to have it spelled correctly. Returning the card to Hobby Lobby could be an issue, as I bought the cards from last years clearance plus, I don’t have a receipt anymore. I guess getting 70% off on clearance is not worth it after all when I saw the misspelled word. The next time I hunt for bargains I’ll be meticulous but with the eyesight I have I guess that’s what happened. Great excuse right? 





Well, I already bought another box of cards today, 50% off still a great deal for sure. Anyway, the address labels that I ordered online came in the mail today. Oh my goodness! They are lovely and I can’t wait to use them when I send our Christmas cards hopefully this week or so. Well, this week is going to be a busy week. Cookies with Santa is tomorrow, First Grades are going to sing but I have not heard a song from Charles on what they are going to sing. Winter Party is December 18, also their last day of school. 




Since I have nothing to do around the house I volunteered to help prepare the classroom party. I’m sure Charles would love having me around. But most of all I am looking forward to Christmas breaks and Charles opening his presents. Now, he added a pug on his lists and he is not getting any even though we all like them. Having a pet around can be a hassle especially when Doug and I have allergies so we are not getting any, sorry Charles.

If you could only ask me how my weekend was I would tell you it was very unpleasant to say the least. First, I had no idea our dryer quit working until I checked the clothes that were inside still wet. While hanging the clothes Charles’ told me; “you’re doing it the old fashioned way” which I burst out laughing. Omg! Look who’s talking? Seems like my son is already older the way he talks about small things as if he knows them. But the good news is we got a new dryer, and I am loving it. Though I would have loved to have a new matching washer as well but why get a new washer when our other one is still in good shape? Just thought about it when we shopped for our new dryer but front loader is not going to be our future washer as it has leakage problem in the long run. 

So today, doing laundry and folding clothes has kept me busy throughout the day. Imagine not doing laundry for one week it took 3 laundry baskets for our dirty clothes which I usually do laundry every two days. I am so relieved I got them all done today. For the other unpleasant days we had, Doug’s car would not start at all. Luckily, we found out Sunday afternoon when I was about to wash his car and not Monday morning when he’s going to work. Gladly, it was fixed and has a new battery installed. As far how’s my day have been I would say it was pretty good compared to the mom on the other side of the car rider lane this afternoon for sure. Imagine if somebody will approached you to moved your car then all of the sudden you will hear “you’re such a bitch”. 

Definitely not her fault the one who’s being asked to move. The person who approached the other mom could have just backed her car and drove the other way around instead she screamed “you’re such a bitch” for everyone to hear. Besides, it was her second time driving through the car rider lane. Even if you will be inside the school for a few minutes just park your car on the parking lot then walk, its hassle free. Also, if she’s smart enough she knows car rider lanes gets busy before 2 o’clock. This kind of person was just like a ticking time bombed hot temper and exploded right away. Oh well, Charles’ 7th birthday is coming of course he is very excited. He already picked his cake from Walmart but I would love to make some changes on the frosting swirls.

Our Flea Market shopping won’t be the same without stopping by to get something to eat. Well, Doug wanted to eat at Cheddar’s while we’re in Joplin, Missouri, but Charles and I wanted to eat at Spring River Buffet at Downstream Casino. Any of these two are just fine with me, I like Cheddar’s so we drove to Cheddar’s. Just by the looked outside too many people already waiting it could probably take us about 30 minutes to an hour wait which I was not in the mood for. My feet were already sore from walking four different antique stores. Though I did have fun finding novels at a great price.

Well, Charles and I got our luck as we ended up at Spring River Buffet, though there were people waiting in line there too. Yet the line was moving quickly so I guess we had our table about 20 minutes later, which isn’t a bad thing after all. Charles had lo mien noodles then finished up with red velvet cupcake for his dessert. Anyway, Charles’ 7th birthday are only couple months away, he’s very excited. He knows what birthday presents he wants even for Christmas he’s thinking ahead what to get.

Right now, he’s into Lego Minecraft that’s all I hear all the time when he plays the game on his phone. If we couldn’t find his birthday presents at Wal-Mart it’s on Ebay that’s what Charles’ says. Just like last night I had no idea he was playing Minecraft hiding under the sheets. He changed the brightness of his phone the sound was off so I could not hear anything. When he kept on kicking his legs I thought he was restless so I told him “you will sleep in your room” if you will not go to sleep. A few minutes later I heard him snoring so I got up and noticed his phone beside him and it was hot. 

Hmmm my little bugger outsmarted me but not anymore tonight. At his age now he doesn’t like it when I told him to do so, he never listen to me. Though seeing him fixing his hair every 10 minutes feels like my baby is becoming conscious how he looks. He likes messed up hair on the front, not to brag about it but he really looks very handsome with it.

What Have You Been Up To

Each day is going by so quickly. Before I know it, my boys will be back at school in August. That will make the house very quiet in about a month. Speaking of school I thought Charles had a really great time during his Kindergarten year. He received an award during his third and fourth quarter of the school year. The fourth quarter award surprised me the most when I attended his Kindergarten End of Year Celebration. His teacher didn’t inform us so it was totally surprising especially for Charles when his teacher called his name. His skills in reading and math makes me so proud.  His writing though I am having difficulty teaching as he is left-handed. Besides, he never listens and follows what I just taught him. Well, he’ll learn it from school so I never force him to do it too much. 

Oh my, it’s been a year now since I got my driver license. Even I never imagined getting a license and driving my own car. I never thought of that my whole life, guess I was just a too simple type of person and scared of every thing that could possibly go wrong. Driving alone and going to the store for grocery shopping gives me freedom as I don’t have to be in a hurry like when my boys are not with me. Charles likes to go home right away even when we haven’t started shopping, I understand that. I don’t want to be away from home either but when I’m at the store or doing shopping I like to take my time slowly and enjoy what I’m doing. 

Romance Novels, Flea Market Finds

Anyway, what have you been up to with your summer break? For me, we took a trip to Texas, and Missouri before the summer began. I also kept myself busy reading romance novels that I bought at the Flea Market for the price of .25 & .50 cents each, definitely a bargain. Cooking dishes, desserts and making homemade ice pop (ice buko & mango) that I used to eat in the Philippines are like me never being away from home.

We also watched some movies, The Avengers, Home, and Inside Out, in 3D though there was a problem with the 3D film so they gave us free movie passes. We were all looking forward to seeing Minions so we watched the movie on opening day. As always we all loved the movie and are all looking forward to Peanuts coming this November. It is still a long wait but at least it is something to look forward to. So far my summer is by far the best that I ever had after having health issues. My allergies are getting better though I still sneeze occasionally and I have no complaints at all. 

Chocolate Chip Cookies

Today, I baked Chocolate Chip Cookies. My boys loved them so much that I wanted to share the recipe so you can make yours.


Chocolate Chip Cookies
Ingredients:

1 cup (2 sticks) butter
2/3 cup brown sugar
2/3 cup white sugar
1 egg
1 ½ tsp vanilla extract
2 cups flour
1 ¼ tsp baking soda
1 tsp salt
1 (11.5 oz) Nestle Toll House Chocolate Chunks 

Directions:

1 Preheat oven to 350 F.

2 In a large bowl, cream butter and both sugars until well blended. Add the egg and vanilla extract and mix to combine.

3 In a separate bowl, sift the flour, baking soda and salt together. Slowly add these ingredients into the butter mixture and still until combined.

4 Fold in Nestle Toll House Semi Sweet Chocolate Chunks.

5 Drop dough by rounded tablespoons onto a lightly greased tray, about 2 inches apart.

6 Bake 8-10 minutes for chewy cookies or 12-14 for crispy cookies.

NASCAR Sprint Cup, Spongebob Squarepants 400

When my son, started watching NASCAR Sprint Cup, races at the age of 2, I was totally amazed how much he loved car racing. Even practices or qualifying he would spend hours watching them on television. My husband, and I were not big fans of car racing.  Though after  spending time watching it with our son, Charles we now both enjoy it. Seeing the big wrecks, the 2 laps is very exciting especially when your favorite driver is leading though gut wrenching where there’s a caution. 






With the three of us being huge NASCAR fans now of course, we’ve been to a couple of races at Kansas Speedway. The first one was when my husband got free tickets from the Marine Corp, at school where he teaches. Second, my sister-in-law, and her husband was with us. Our third one was last Saturday, NASCAR Sprint Cup, Spongebob Squarepants 400. This time 9 of us watched the race which was more fun to watch though it rained during the race. Till the time the racetrack was dried out which took 2 hours it was already late at night until the race was over. 

Thankfully, one of my favorite Hendricks drivers, Jimmie Johnson, won the race but I would love to see Jeff Gordon, Dale Earnhardt Jr., or Kasey Kahne win the race. For Charles, his favorite drivers; Brad Keselowski, Joey Logano, or Kyle Larson wins the race. When the race was over walking down to the parking lot was muddy which kinds of reminds me of the Philippines. Luckily, we found the car easily, getting out of the parking lot took us a couple of minutes so it was about 2 in the morning when we arrived at my sister-in-law’s house. Oh my, it was already late. 

Now, that Doug is planning to watch an Indy Car race, in Fort Worth, Texas, makes me think twice whether we should go or not. It’s a long drive, what’s the weather going to be like but the tickets are so affordable and hard to come by. Plus, this would be our trip for the summer out of State if ever we will go.

Our NASCAR Tickets

When Charles started watching car racing when he was just two years old, I couldn’t understand why? He always stood up in front of the television watching even if it’s only qualifying. Since then, his weekend always ended up watching NASCAR, Indycar, Formula One, Motocross, and Monster Jam.  Now, Doug, and I, got caught up enjoying watching those races with him. Seeing Charles, so happy cheering as his favorite NASCAR driver Brad Keselowski, wins the race was very interesting to see. Watching  the race in person is even better. 



When Doug, got free NASCAR tickets at Kansas Speedway we drove all the way to Kansas City just to watch the race. Watching the NASCAR race at the racetrack was way better than watching it on television. The pageantry of the drivers and the crowd are more enjoyable when you’re such a part of it. And this week is no exception as we are going to watch the NASCAR Spongebob Squarepants 400 at Kansas Speedway. We got our tickets and are all looking forward to watching the race. Hopefully, the weather is perfect for a night race. My allergies are really getting worse each day and taking medicine makes me drowsy. I hope they get better by next weekend.

I Cooked Something Fancy

So far Charles, and his team have played two games of soccer and they have lost both pretty bad. Tomorrow, they have another game at 6 o’clock and another one is on Saturday. Hopefully, their team can win before the season is over. Their team has been practicing very hard and I would love to see them win even just once. Seeing my son, play soccer makes me scream from the bench especially when he scored twice in a row on their first game but still their team lost. Soccer is a fun game to watch. It gives Charles’ confidence to get the ball from the opponent but not in an aggressive way.

Anyway, I cooked something fancy last week, pork chop and grilled tilapia. Don’t the pork chop, and tilapia look yummy? Sure it does! It has fennels, and my newfound favorite herb, parsley. For tilapia, I made my own chutney. It has mango, red onions, tomato, and cilantro, seasoned with salt. As always no measurements for these dishes I made. 

Well, spring has really sprung. My allergy isn’t getting any better unless I take allergy medicine and nasal spray (Flonase)  which could last for 6 months. When I began sneezing last year, I thought it was just an ordinary cold that I was having. Then I realized this isn’t normal anymore sneezing as early as 4 in the morning. When I finally had enough to get it checked from a doctor I found out I was having allergies.

Fried Chicken with Asparagus & Scalloped Potatoes

Its been awhile since I have watched Chopped, on the Food Network. With last week’s marathon it gave me an idea of cooking fried chicken for dinner using other ingredient (panko) that I have not used before. To be honest, I was really nervous how the chicken would taste, as I am used to of using only two ingredients, salt and black pepper. But it turned out delicious according to Doug, well, he always liked when I cooked something new for our meals together. Paired with sautéed asparagus, and scalloped potatoes we had a perfect combination.

What A Spring Break I Had

What a spring break I had over the weekend. Doug, and Charles had walking pneumonia and it was really bad. Both of them went to the doctor with their own prescribed medications thankfully, all is well aside from Doug’s, minor coughing. With their spring break, we did not do anything outdoor activities aside from watching the movie, Home. The movie was good. We all liked it especially Charles who really enjoyed watching while eating all of his popcorn. 

While it has been a long time since we watched a movie altogether seeing Charles laugh and wanted to watch the upcoming movies made me feel happy. There’s a movie coming this June, Inside Out; and it looks very interesting to see with them. Before then, we are going to watch NASCAR Sprint Cup, Spongebob Squarepants 400, in Kansas City this May 9 and Charles was very happy when he saw the commercial on television for the race. 

Doug, already bought our tickets online though we haven’t gotten the tickets yet but I’m sure it will be in the mail sometime soon. Anyway, this month is almost over and so is the school year for my boys. Days are going by so quickly and Charles will be in first grade. Definitely, he has had a good year of Kindergarten especially when he received his Academic and Citizenship Assembly Award, before spring break. 

Receiving his awards was a huge surprise for him when his teacher called his name and seeing me and his dad at school. I know how much he really wanted to receive an award but we always told him when you want something you have to work for it and don’t be upset when you don’t get it. That’s how it works my dear. Being a mom, of course, it was one of my proudest moments seeing Charles so happy and proud.

Shoes, shoes, shoes! Women can’t have too many shoes right? Well, I was browsing my Twitter and saw some tweets from Payless about the shoe that caught my attention. Hmmm I do really liked the shoe when I looked it up from their website. When I noticed they have size 5 I thought I’d better check it out at the store sometime this week. 


But while we’re already out I went to Payless tonight and bought 3 pairs of shoes as I really liked them a lot. Most of all it was on clearance. Who doesn’t want to get a bargain these days?


Its March, and Its Freezing!

Its March, and its freezing! How I wish we can have nicer weather over the next few days so we can go to the mall and shop around. Last week, I took Charles to go shopping but before we shopped he wanted to eat at Fish City Grill, his choice not mine. Though I would prefer to take him out to eat at P.F. Chang’s knowing he really liked their Lo Mein noodles.

I guess he must be really starving when he ate all of his mac and cheese before I was done eating up my food. Then he ate crackers that were on the table so I gave him some of my fries. When Charles wanted something to eat I’d be delighted to prepare or give it to him as long as he’s going to eat it. Eating has always been his problem and recently Charles has added cheeseburger to his list of foods to eat.

What I've Been Up To Lately

Of all the anticipation of Valentines Day, I realized how quick the day just went by especially as we celebrated earlier than most couples do. Nothing fancy. We ate at Copeland’s of New Orleans, before Doug went to Greenwood for his Wrestling Tournament over the weekend. As for Valentines Day, it was such an ordinary day for Charles and I but I planned to take him out to eat for lunch. But knowing how restaurants could be busy on Valentines Day, I waited too long which did not sit well with Charles.

So I opted not to go instead I cooked some dishes and baked cupcakes. I cooked pancit and beef steak for my dinner as it was on my mind over the weekend. And when I was about to make frosting for the cupcakes Charles, almost ate the small ones so I didn’t bother to frost any of them. As always Charles said; it tasted really good mama which makes me feel good inside when Charles really likes the food that I am making.

With wrestling season about to be over next week Doug, is gone most days of the week. Of course, it scares me at night when only Charles, and I, in the house though it gives me the reason to keep my self busy. Right now, there’s an app that I really liked, instacollage2, and never realized it was already midnight since I started learning how the apps worked and I loved it.

I Am Not Too Hard On Charles

Growing up, we never really got what we wanted like clothing, shoes, or toys. When we really want those things we had to work for it like doing household chores or go to the farm during harvest time. And most of all, you have to be good and do what my mother said. Being a mom, I am not too hard on Charles, when it comes to clothing, shoes, but not on toys as he has plenty of them already. When I go shopping its always for Charles. I don’t think I am spoiling him too much though I just wanted to get him the best things I can. 

And knowing how many pairs of shoes he already has for everyday use, I bought him a new pair today.  No more tying shoelaces, snap on, and his good. Seeing his untied shoes everyday is driving me crazy as he doesn’t know how to tie his shoe even though we taught him how to tie his shoelaces. Aside from that when Charles, says; he wants to eat at McDonald’s after school as much as I don’t want to we always end up at McDonald’s in the afternoon. Its just hard to resist “triple please”, or when he gets good colors of the day from school. 


Well, wrestling season is almost over and I know how tiring it is for everybody on the team. Some wrestlers are out which kind of sucks which also could hurt for the team at the  State Wrestling Tournament. The team has been working hard throughout the season and I know how much they want to have a great season.

I Made Flan

It has been a tough week. Been sick most of the time and it is very frustrating when I couldn’t breathe very well. This morning I woke up around 4 in the morning and I started sneezing and had a runny nose at the same time. Is there any day that I will feel better even just for a day? I have not felt a day where I am feeling 100% with my health. Maybe I’m dying by taking my life slowly, just kidding. Finally, tomorrow is Friday! Really looking forward to this week especially Charles does not have school Monday. He can have a bubble bath that he has been wanting for so long. Well, tonight I made Flan, though in the Philippines, it is called Leche Flan. It is very easy to make. First, turn the oven to 350 degrees.

Flan

To make caramel:

2 cups brown sugar
2 tbsp water
Turn the heat low until the mixture is thicken. Then pour into ramekin bowl for about 2 tbsp each.

Flan Mixture:

1 large can condensed milk
1 large can evaporated milk
8 egg yolks

Blend the 3 ingredients for about 5 minutes on a blender. Pour the mixture into ramekin, about full in each bowl. On a baking dish put water and bake for about 40 minutes. Serve cold, taste really good.

Very Tough Year on My Family

Last year, has been very tough on my family. There have been many problems just kept on coming one after another. The last four months was the saddest months of all when we celebrated Halloween, Thanksgiving, Christmas Day, and New Year. Plus, being sick days before Christmas I thought I am not going to make it. It was the worst feeling I had in a long time. I was literally shaking even after taking medicine. Then Charles got sick on Christmas Day, it was very hard on me seeing him not feeling very well knowing he has to enjoy all his Christmas gifts. Charles hardly gets sick though I’d rather be sick than him as I am used to being sick all the time. Even after getting my flu shot I got sick right away. 

Well, I had my eye checked up just days ago and the result was very good. I thought I’ll be wearing eyeglasses by now, thank God, I don’t have to wear any. Still, I need to make another appointment to get my headaches, dizziness, and nausea checked. This is getting worse by taking my life away from doing things that I really like to do. Just today, was really bad as well. There are so many things that has to be done like putting our Christmas tree down, and cooking my dinner. Thankfully, Charles picked up all his toys around the house yesterday to keep his Super 8 hotel cleaned, haha. 


Earlier tonight, got some things done and cooked one of my favorite dishes. Sorry, I don’t have a recipe to share as I don’t measure anything when I cook except when I’m baking. Well, another year to start with and for New Year’s resolution I don’t have any. Though this year I am planning to renew my passport and hopefully visit to the Philippines before I apply for my Naturalization. Changing my citizenship is another big step for me knowing Doug really wanted me to change my citizenship for years. With Charles hopefully he would like to eat different types of foods before we visit to the Philippines.
