I Made Flan

It has been a tough week. Been sick most of the time and it is very frustrating when I couldn’t breathe very well. This morning I woke up around 4 in the morning and I started sneezing and had a runny nose at the same time. Is there any day that I will feel better even just for a day? I have not felt a day where I am feeling 100% with my health. Maybe I’m dying by taking my life slowly, just kidding. Finally, tomorrow is Friday! Really looking forward to this week especially Charles does not have school Monday. He can have a bubble bath that he has been wanting for so long. Well, tonight I made Flan, though in the Philippines, it is called Leche Flan. It is very easy to make. First, turn the oven to 350 degrees.

Flan

To make caramel:

2 cups brown sugar
2 tbsp water
Turn the heat low until the mixture is thicken. Then pour into ramekin bowl for about 2 tbsp each.

Flan Mixture:

1 large can condensed milk
1 large can evaporated milk
8 egg yolks

Blend the 3 ingredients for about 5 minutes on a blender. Pour the mixture into ramekin, about full in each bowl. On a baking dish put water and bake for about 40 minutes. Serve cold, taste really good.
