I Cooked Something Fancy

So far Charles, and his team have played two games of soccer and they have lost both pretty bad. Tomorrow, they have another game at 6 o’clock and another one is on Saturday. Hopefully, their team can win before the season is over. Their team has been practicing very hard and I would love to see them win even just once. Seeing my son, play soccer makes me scream from the bench especially when he scored twice in a row on their first game but still their team lost. Soccer is a fun game to watch. It gives Charles’ confidence to get the ball from the opponent but not in an aggressive way.

Anyway, I cooked something fancy last week, pork chop and grilled tilapia. Don’t the pork chop, and tilapia look yummy? Sure it does! It has fennels, and my newfound favorite herb, parsley. For tilapia, I made my own chutney. It has mango, red onions, tomato, and cilantro, seasoned with salt. As always no measurements for these dishes I made. 

Well, spring has really sprung. My allergy isn’t getting any better unless I take allergy medicine and nasal spray (Flonase)  which could last for 6 months. When I began sneezing last year, I thought it was just an ordinary cold that I was having. Then I realized this isn’t normal anymore sneezing as early as 4 in the morning. When I finally had enough to get it checked from a doctor I found out I was having allergies.

Fried Chicken with Asparagus & Scalloped Potatoes

Its been awhile since I have watched Chopped, on the Food Network. With last week’s marathon it gave me an idea of cooking fried chicken for dinner using other ingredient (panko) that I have not used before. To be honest, I was really nervous how the chicken would taste, as I am used to of using only two ingredients, salt and black pepper. But it turned out delicious according to Doug, well, he always liked when I cooked something new for our meals together. Paired with sautéed asparagus, and scalloped potatoes we had a perfect combination.
